Ingredients

- 8 large eggs
- 1 cup half-and-half

- Salt & pepper, to taste
- 1 cup shredded cheese (sharp cheddar is great, but any favorite will work)
- 1 bag (28 oz) of tater tots (mini tater tots are especially amazing!)
Instructions
Preheat oven to 375°F and grease a 9×13-inch baking dish.

Brown the sausage in a skillet over medium heat, then set aside to cool slightly.

In a large bowl, whisk together the eggs, half-and-half, seasoning salt, salt, and pepper until well combined.

Spread the browned sausage evenly across the bottom of the prepared baking dish.

Sprinkle half the cheese over the sausage.

Pour the egg mixture evenly over the sausage and cheese layer.

Arrange the tater tots in a single layer on top—make sure they aren’t submerged so they can get nice and crispy!

Bake uncovered for 45 minutes.
Sprinkle the remaining cheese over the tater tots and return to the oven for another 15 minutes until the cheese is melted and bubbly.
