Chicken Enchiladas

Bring some flavor the table with these flavorful chicken enchiladas.

Ingredients

  • 1 3/4 lbs sliced chicken breast
  • 2 cups shredded Monterey jack cheese with jalapeno
  • 1 cup sour cream
  • 1 teaspoon chili powder
  • 1/8 teaspoon grounded red pepper
  • 1/4 teaspoon salt
  • 10 tortillas
  • 1 12oz can enchilada sauce
  • 1/2 cup sliced black olives
  • 1/4 cups scallions, chopped

Instructions
1 – Preheat oven to 350F.

2 – Dice chicken into bite size pieces.
3 – Combine the chicken, 1 cup of cheese, sour cream, chili powder, ground red pepper and salt in a large bowl.

4 – Spread about a 1/4 cup of the chicken mixture on each tortilla and fold it up tight. Pour 1/2 cup enchilada sauce on the bottom of a baking dish.


5 – Place tortillas in the baking dish, seams down. Top with remaining sauce and cheese. Bake for 20 minutes. Top with olives and scallions.
