Healthy comfort food… a one pot meal that will impress your guest!
Ingredients:

  • 1.5 cups quinoa
  • 3 cups broth or water
  • 4 chicken thighs
  • 1 onion or leek
  • Olive oil

Instructions:

  1. Heat olive oil in pan with onions or leeks
  2. add chicken.. cook on both sides for a few minutes
  3. add 3 cups broth or water
  4. add 1.5 cups quinoa
  5. cover and cook on lower temperature
  6. Serve warm!
