Popovers

This is my own variation on the classic popover recipe, with sugar and cinnamon, nutmeg and vanilla added for flavor. You can stay the savory route, but you’re feeling adventurous, try this version! If you don’t have whole nutmeg to freshly grate, use the already grated stuff! You won’t want to miss out on it’s flavor impact.


INGREDIENTS

  • 1 cup flour
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • 1 cup milk
  • 1 tablespoon vanilla extract
  • 4 eggs
  • 1/4 cup clarified unsalted butter, melted

DIRECTIONS

STEP ONE:

Preheat the oven to 425 degrees. Put the popover tin in the oven to heat. Sift the flour into a large bowl ad make a well in the center. Sprinkle the salt, sugar, cinnamon, and nutmeg in the bowl. In a small bowl, lightly the milk and vanilla wit a fork. Pour the liquid ingredients into the flour and stir. In a small bowl beat eggs and 2 tablespoons of melted butter together with a fork. Add to the flour mixture and combine well, but do not over beat. Strain through a fine-mesh strainer to remove any lumps.

STEP TWO:

Remove the heated tins from the oven and brush with the remaining butter. Fill each tin half way and bake at 425 for 15 minutes, then lower the temperature to 350 and bake for 15 minutes more.

STEP THREE:

Remove popovers form the oven and prick a hole in the top of each popover. Turn off the oven, return the popovers to the oven and prop the door slightly. Let them sit for 15 minutes and then remove them from the oven. Now you can enjoy your fluffy and delicious popovers.
