  • 1 cup cooked white or brown rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 lime, cut into wedges
  • Salt and pepper, to taste

Instructions

  1. In a large skillet over medium heat, cook the ground beef (or turkey) until fully browned, breaking it apart with a spoon as it cooks. Drain excess fat if needed.
  2. Add the taco seasoning mix and cook according to package instructions, usually adding some water and simmering until the mixture thickens. Season with salt and pepper to taste.
  3. In the meantime, prepare your taco bowl bases by adding a scoop of cooked rice into each bowl.
  4. Top the rice with the taco-seasoned ground meat, followed by black beans, corn, lettuce, and tomatoes.
  5. Sprinkle with shredded cheese and add a dollop of sour cream.
  6. Garnish with chopped cilantro and a squeeze of lime juice.
