Ingredients
Salsa
- 1/2 red onion – diced
- 1 jalapeno pepper – seeded and diced
- 3 tomatoes – diced
- 1/4 cup cilantro – chopped
- 2 tablespoons lime juice
- 1/2 teaspoon salt
- Filling
- 2 teaspoons brown sugar
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 14 ounces boneless chicken breasts
- 8 small corn tortillas
- 2 cups shredded lettuce
Instructions
1 – Make the salsa by putting the onion, jalapeno peppers, and tomatoes into a bowl and stirring well. Add the cilantro, lime juice, and salt and stir to combine.
2 -To make the chicken filling, preheat the broiler to high or put a griddle pan over high heat. In a bowl, combine the brown sugar, cumin, chili powder, salt, and pepper. Rub the spice mixture all over the chicken breasts.
3 – Broil the chicken breasts over high heat for about 4 minutes per side, or until lightly browned on the outside and cooked through. Remove from heat and let stand about 5 minutes, then slice into thick slices.
4 – To serve, heat the tortillas briefly on the broiler, then top with the chicken, salsa, and lettuce. Serve immediately.
