Cornbread
Ingredients
- 1 1/3 cups flour
- 1 teaspoon salt
- 4 teaspoons baking powder
- 1 teaspoon superfine sugar
- 2 cups cornmeal
- 1 stick salted butter - softerned
- 4 eggs
- 1 cup whole milk
- 3 tablespoons heavy cream
- vegetable oil - for greasing
Instructions
Preheat the oven to 400°F. Brush an 8 inch square cake pan with oil.
Sift together the flour, salt. and baking powder into a bowl. Add the sugar and cornmeal and stir to mix. Add the butter and cut into the dry ingredients with a knife, then rub it in with your fingertips until the mixture resembles fine bread crumbs.
Lightly beat the eggs in a bowl with the milk and cream, then stir into the cornmeal mixture until thoroughly combined.
Spoon the dough into the pan and smooth the surface. Bake in the preheated oven for 30-35 minutes. Remove the pan from the oven and let cool for 10 minutes, then cut into squares and serve warm.
