Cornbread
Ingredients
- 1 1/3 cups flour
- 1 teaspoon salt
- 4 teaspoons baking powder
- 1 teaspoon superfine sugar
- 2 cups cornmeal
- 1 stick salted butter – softerned
- 4 eggs
- 1 cup whole milk
- 3 tablespoons heavy cream
- vegetable oil – for greasing
Instructions
- Preheat the oven to 400°F. Brush an 8 inch square cake pan with oil.
- Sift together the flour, salt. and baking powder into a bowl. Add the sugar and cornmeal and stir to mix. Add the butter and cut into the dry ingredients with a knife, then rub it in with your fingertips until the mixture resembles fine bread crumbs.
- Lightly beat the eggs in a bowl with the milk and cream, then stir into the cornmeal mixture until thoroughly combined.
- Spoon the dough into the pan and smooth the surface. Bake in the preheated oven for 30-35 minutes. Remove the pan from the oven and let cool for 10 minutes, then cut into squares and serve warm.
