It’s fall in the middle of spring with this pumpkin pancakes recipe

Pumpkin Pancakes
Ingredients
- 1 cup flour
- spray of vegetable oil spray
- 1/4 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 egg
- 1 1/4 cups milk
- 1/2 cup pumpkin puree
- 1 teaspoon vanilla extract
Instructions
In a bowl, combine flour, brown sugar, baking powder, cinnamon and salt. In another bowl whisk together egg, milk, pumpkin puree and vanilla extract. Whisk the dry ingredients together with the wet.
Heat a skillet with some vegetable oil spray and heat over medium high heat. When hot, ladle in the batter 1/4 cup at a time.
Cook for 2-3 minutes on both sides. Serve immediately with maple syrup.
