Spicy Corn Chowder
Ingredients
- 1 onion - diced
- 3 garlic cloves - finey chopped
- 2 carrots - diced
- 2 celery stalks - diced
- 1/2 red bell pepper - diced
- 1 pound frozen corn
- 3/4 teaspoon salt
- 1/2 teaspoon chili powder
- 4 cups vegatable stock
- 8 ounces tofu
- 1 tablespoon olive oil
Instructions
Heat the oil in a skillet over medium-high heat. Add the onion and garlic and cook for about 5 minutes, stirring occasionally. Add the carrots, celery. bell pepper, corn, salt, chili powder, and stock. Bring to a boil, reduce the heat to medium-low and simmer, uncovered, for about 20 minutes.
In a blender or food processor, puree the tofu with a some of the soup. Stir the puree into the soup and simmer for about 5 minutes.
Serve hot.
