Fried and boiled eggs are out and egg nests are in, a different way have eggs for breakfast.

- 3 tablespoons butter
- 1 tablespoon chopped onion
- 2 tablespoons chopped plmiento
- 1 tablespoon chopped parsley
- 3 cups mashed potatoes
- 6 eggs
- Few grains salt
- 1/4 cup grated cheese
Sauté onion and pimiento lightly in 1 tablespoon butter for 5 minutes. Add chopped parsley, 1 tablespoon butter and mix with mashed potatoes; beat until creamy.
Spread potato mixture in a buttered baking dish (8” square or round). Make 6 hollow places with a spoon and drop an egg into each. Sprinkle with salt and grated cheese; dot with remaining butter.
Bake in a moderate oven (375° F) for 20-25 minutes.
