  • 4 bell peppers any color
  • 1 lb ground beef
  • 1/2 onion diced
  • 1 tsp garlic minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp olive oil
  • 1 cup rice cooked
  • 1 cup shredded cheese any kind
  • Salt and pepper to taste


  • Preheat oven to 375°F. Line a baking sheet with foil.
  • Cut bell peppers in half and remove the seeds and membranes. Set aside.
  • Heat a large skillet over medium heat and add olive oil. Once the oil is hot, add onions and garlic and sauté until onions are softened, about 5 minutes.
  • Add ground beef and season with cumin, smoked paprika, salt, and pepper. Cook until beef is no longer pink, about 8-10 minutes.
  • Add cooked rice to the beef mixture and stir to combine.
  • Fill the pepper halves with the beef and rice mixture and top with shredded cheese. Place stuffed peppers on the prepared baking sheet.
  • Bake for 25-30 minutes or until the peppers are tender and the cheese is golden brown.
