Veal scallopini; the best way to eat veal

- 1 1/2-2 lbs. veal cutlets
- 1 cup french dressing
- 1 small onion - sliced
- 2 tablespoons hot fat
- Salt and pepper
- 2 tablespoons flour
- 2 tablespoons chopped green pepper
- 1/2 cups chicken broth
- 5 to 6 sliced olives
- 1/2 lb. sautéed mushrooms
- 2 tablespoons chopped parsley
Flatten veal cutlets and marinate in french dressing for 15 minutes. Brawn meat and sliced onion in not fat in deep frying pan or skillet. Season with salt and pepper.
Sprinkle both sides of meat with flour and brown again slightly. Add chopped green pepper and chicken stock; stir well. Cover closely and cook slowly 18 to 20 minutes on each side.
Add sliced olives. mushrooms and parsley just before serving.
