Oat bars are really easy to make and taste way better than store-bought cakes.

Apricot Oat Bars
Ingredients
- 1 1/2 sticks margarine - plus extra for greasing
- 1/3 cup demerara sugar or other raw sugar
- 1/4 cup honey
- 1 cup chopped dried apricots
- 2 teaspoons sesame seeds
- 2 1/2 cups rolled oats
Instructions
Preheat the oven to 350°F. Grease a shallow 101/2 x 61/2-inch baking pan.
Put the margarine, sugar, and honey into a small saucepan over low heat and heat until the ingredients have melted together-do not boil. When the ingredients are well combined, stir in the apricots, sesame seeds, and oats.
Spoon the mixture into the prepared pan and smooth the surface with the back of a spoon. Bake in the preheated oven for : 20-25 minutes, or until golden brown. Oat bars are still soft when they come out the oven.
Remove from the oven, cut into 10 bars, and let cool completely before removing from the pan.
