Chicken Enchiladas
Ingredients
- 1 3/4 lbs sliced chicken breast
- 2 cups shredded monterey jack cheese with jalapeno
- 1 cup sour cream
- 1 teaspoon chili powder
- 1/8 teaspoon grounded red pepper
- 1/4 teaspoon salt
- 10 tortillas
- 1 12oz can enchilada sauce
- 1/2 cup sliced black olives
- 1/4 cups scallions, chopped
Bring some flavor the table with these flavorful chicken enchiladas.
Instructions
1 – Preheat oven to 350F.
2 – Dice chicken into bite size pieces.
3 – Combine the chicken, 1 cup of cheese, sour cream, chili powder, ground red pepper and salt in a large bowl.
4 – Spread about a 1/4 cup of the chicken mixture on each tortilla and fold it up tight. Pour 1/2 cup enchilada sauce on the bottom of a baking dish.
5 – Place tortillas in the baking dish, seams down. Top with remaining sauce and cheese. Bake for 20 minutes. Top with olives and scallions.
